Leftover Mashed Potato Appetizer Recipe

One of my favorite appetizers if there is any leftover mashed potatoes left! These with some garlic powder and shredded cheddar cheese make the best little treat even for the kids!  Try baking them for a healthier version~  Happy Thanksgiving from Curt @Curt's Delectable Blog!

2 cups mashed potatoes seasoned with 1/2 teaspoon garlic powder and 1 teaspoon parsley flakes
1/4 cup egg white beaten with 2 tablespoons water
1 egg
Panko or Italian flavored bread crumbs
1/4 cup sharp cheddar cheese shredded
parsley flakes

In a bowl mix the mashed potatoes that were seasoned with 1 egg and shredded sharp cheddar. Using a scooper make balls and place on a cookie sheet, freeze for around an hour. Remove from freezer, dip in beaten egg whites then roll into bread crumbs. These can be fried in oil or baked on 400 degrees until browned (note if baking drizzle with olive oil first).  Garnish with parsley flakes, great dipped in melted velvetta cheese~!

Note: you can also add bacon chopped up, chives, bits of sausage cooked or even ham chunks for a meat variety!
