Cinco De Mayo is upon us. A day that is celebrated in many homes across the nation and tradition to cook your favorite Mexican dish. In my home, Cinco De Mayo is celebrated with a spicy Mexican dish along with some salsa and tortilla chips. And of course, let's not forget the homemade Guacamole. Today I am sharing with you my version of a spicy Chicken Enchilada that I cook for my family on this day. It is made with a blend of herbs and spices along with some fresh organic ingredients. Pan Fried Garlic Herb Chicken A chicken recipe that is simple and comes out tender and juicy. If you are looking for an easy meal, you found it. Looking to Impress your friends? Try this simple Yet Gourmet Recipe and Shock them! Ingredients and things you'll need: 2.5 lbs. Sliced Thin and Pounded Chicken Cutlets or Breasts 1/4 Cup Italian Style Bread Crumbs Fresh Whole Milk Mozzarella Premium Extra Virgin First Cold Pressed Olive Oil 1/4 Pound Premium Cappicola 1 Package Of Premium Apple wood Smoked Bacon (Crispy Cooked prior to putting inside chicken) 1/3 Cup Of Rhine Table Wine 2 Tbsps. Of butter or Margarine 1 tsp. Fresh Ground Black Pepper Toothpicks to hold together Instructions: Start by flattening out your chicken try not to let the chicken separate while flattening. You may remember my Lemon  Reggiano Chicken Guest post on What's Cookin' Italian Style Cuisine? Well if not here is the homemade chicken nugget version and the perfect afternoon Sunday snack.  Actually the smell of them frying reminds me of homemade meatballs but in chicken form. The sauce I make that it's coated in is a simple fresh squeezed lemon sauce. Grilled Tennessee Whiskey Chicken Recipe

Using a good Tennessee Whiskey this is one that is asked for time and time again! The flavors are perfect for chicken or pork. Always comes out juicy, tender and flavorful! 1/4 cup Tennessee Whiskey your favorite brand 1/4 cup Soy Sauce 2 tablespoons lemon juice or lime juice 2 cloves minced garlic 1/2 cup ketchup 1/2 cup dark brown sugar pinch of cayenne pepper 1 tablespoon olive oil 1/4 teaspoon smoked paprika 6 pieces of Chicken of your choice. This works great with pork ribs too! Place all ingredients in a small saucepan, except chicken. Boil for 5 minutes or until thickens. Cool. Place your preferred chicken pieces in a large zip lock bag. Pour half the sauce over the chicken to marinate chicken pieces for at least 3 hours or overnight. Preheat grill or bake in a preheated oven on a grated cast iron pan. Place chicken pieces on an oil sprayed hot grill. Cook on one side around 12 to 15 minutes and flip. Orange Sauced Grilled Wings Recipe

5 pounds frozen wings thawed blotted dry Cooking methods: Bake at 400 degrees till crisp 20 minutes or deep fry until crisp around 10 to 12 minutes, ( or if you can grill outdoors recommended cook until you have some good grill marks on the outside of the wings.)  Set aside. Sauce: 1 cup honey 1/4 cup orange juice 1/2 cup soy sauce 2 tablespoons ketchup 1 teaspoon garlic powder pinch of red pepper flakes 2 tablespoons butter melted 1/2 teaspoon ginger salt and pepper to taste Place all ingredients in a measuring cup to blend together except wings. Pour this mixture over the cooked wings added to a large baking sheet keeping wings in a single layer. Bake the cooked crisp wings with sauce on top for around 20 minutes until heated through.

Game day will never be the same without these!    Italian Gold Roasted Garlic Wings 1/4 cup melted butter 2 tablespoon yellow mustard 4 tablespoons brown sugar 6 tablespoons extra virgin olive oil 1/2 cup of hot sauce 1 teaspoon cayenne pepper,black pepper or more if you like extra hot 2 whole garlic cloves roasted (Drizzle garlic with olive oil, then wrap in aluminum foil. Bake in preheated oven for 1 hour.) Hot Sauce Grilled Chicken Recipe

Here's a dish with alot of heat and flavors. Using a pan with holes on the bottom on top of the grill makes it possible to stir fry on the grill top.  Pepper's mushrooms and zucchini dress up this white rice.         4 to 6 pieces of boneless chicken breasts or thighs 1 bottle hot sauce sliced mushrooms, zucchini and bell peppers Boiled white rice to package instructions   Cooking oil spray salt pepper   Marinate chicken in 1/2 hot sauce at least 3 hours or overnight.    Heat grill to high.   Using an oil sprayed grill wok or  you can use a large piece of heavy duty foil heavily sprayed with cooking oil then poke holes in it.  Place the chicken in the wok or on the foil. (you can also bake this in the oven on 400 degrees until chicken juices run clear.) Jenni's Secret Roasted Game Hens Recipe

What You'll Need: 2 Cornish game Hens (If Frozen, will need to be thawed) 1 1/2 sticks of butter Seasonings: Garlic, Parsley, Oregano, Salt, Pepper Ensure to take off metal prongs from feet before doing anything else. Optional: One of these: Lemon, Lime, Orange, Mandarin, Tangerine or any other "Sweet" Citrus Fruit. If using fruit inside you will need to tie legs together with cooking/baking string. Directions: Pre Heat Oven to 425 Degrees. Use stick of butter (Unmelted) and glaze outside of both game hens. Then season with above seasonings to your liking. Stuff Cavity with fruit of choice (optional) Place in oven breast up for 90 min. baste with melted butter every 25 min. ENJOY!

Curt's Jack Daniels Barbecued Baked Chicken

1 - 4 lb or 5 lb Chicken Marinade: 1 teaspoon smoked paprika 1/4 cup olive oil 1/2 teaspoon salt 1/2 teaspoon black pepper and cayenne pepper 2 teaspoon minced fresh garlic 2 tablespoons fresh lemon juice 1/2 cup Jack Daniels barbecue sauce or your favorite brand  In a large freezer bag large enough to fit chicken (or you can use a large bowl) place all ingredients with chicken except for the Jack Daniels sauce. Marinate in the bag or bowl overnight. Remove chicken from bag and place on a baking pan, cover with 1/2 cup barbecue sauce ( below recipe), and place on a rack. Bake at 350 till brown and crispy. Serve chicken with extra Jack Daniel barbecue sauce below or your favorite kind. 1 cup ketchup 1 cup cider vinegar 1 cup Jack Daniel's whiskey 1 cup brown sugar 1 teaspoon minced garlic 1/2 teaspoon garlic powder 2 tablespoons Worcestershire sauce 2 tablespoons hot sauce Combine all ingredients in a large saucepan. Peanut Butter Chicken Skewers Recipe

2 tablespoons extra virgin olive oil or canola oil 1 tablespoon soy sauce 3 tablespoons smooth peanut butter 3 tablespoons ketchup 2 lbs of chunk pieces boneless chicken Place all ingredients into a 1-gallon zip lock bag marinade at least 3 hours or overnight. Thread chicken on wooden skewers. Heat grill on medium. Place chicken skewers on heated grill and cook until juice run clear around 10 minutes on each side. You can also bake these on 350 degrees on a iron grated skillet for around 20 minutes.

Grilled Chicken with Buttery Parmesan Sauce

Marinade: 1/4 cup lime juice 1 teaspoon garlic powder 1/4 teaspoon chili powder sea salt and freshly cracked pepper to taste 1/4 cup olive oil zip lock bag gallon size 8 pieces of chicken parts Place chicken parts in a zip lock gallon size bag. Add all ingredients shake chicken to coat. Refrigerate a minimum of 3 hours, overnight is best. Heat the grill on high. Grill 25 minutes on both sides or until juices run clear when pierced. Sauce: 6 tablespoons butter melts Parmesan cheese 4 tablespoon olive oil 2 cloves finely minced garlic 1 tablespoon dried parsley flakes 2 tablespoon lemon juice Mix all together pour over hot grilled chicken and serve.

Curts Delectable Peach Glazed Spiced Chicken

3/4 cup ketchup 3/4 cup peach jam 1/4 cup white vinegar 1 teaspoons Worcestershire sauce 2 teaspoons chili powder 1/4 teaspoon garlic powder pinch of cayenne pepper 1/8 teaspoon salt 1 1/2 pounds boneless chicken breasts or thighs (4 to 6) Place all ingredients into a 1-gallon freezer zip lock bag marinate overnight or at least 3 hours. Grill, bake or fry until chicken is cooked and juice runs clear. Place Glazed chicken over a bed of rice brown or white rice. Garnish with Peach Slices and Roasted peppers as shown. ENJOY!

Curt's Delectable Chicken Parmesano Recipe

Who can resist all that cheese.. One of our family favorites except I tweaked it a little! 6 boneless chicken breasts Italian flavored bread crumbs 2 eggs beaten with 2 tablespoons water flour ziplock bag 1 teaspoon each garlic powder, oregano, dried or fresh basil and parsley chopped 1 cup grating cheese 4 or 5 cups shredded mozzarella cheese you can use more or less marinara sauce ( Click here for mom's homemade recipe ) or store bought white wine (optional) oil to cook in First cut the breasts of chicken in long 1/4 slices. Set aside. Next pour 3 cups of bread crumbs in a ziplock bag, add all the spices, a 1/4 cup of the grating cheese and shake it, set aside. You will need to set up a dunking station, one pie plate with egg wash and one for bread crumbs. Dip chicken in egg, shake in flour, place back into the egg mixture then shake in bag of flavored bread crumbs. Continue with all chicken pieces, placing them on a wax paper...

Curt's Delectable Grilled Lemon Parmesan Chicken Recipe

One of my favorite ways to prepare chicken is grilled.  Marinated first, then dredged with a great Italian Parmesan Lemon Sauce 2 pounds 1/4 inch sliced boneless chicken breasts Lemon Parmesan Sauce: 1/2 cup lemon juice 1 teaspoon minced fresh garlic 1/2 teaspoon garlic powder and 1/4 teaspoon cayenne pepper salt, pepper to taste 1/4 cup extra virgin olive oil 1/4 cup butter melted   fresh parsley for garnish 3 tablespoon grating cheese Marinate chicken in 2 tablespoon of olive oil, 1 tablespoon lemon juice and garlic powder for 35 minutes. Heat grill. Cook chicken on both sides until the juices run clear around 4 minutes on each side. Mix the rest of the lemon juice, oil, salt, pepper, cayenne,  butter, garlic, parsley and cheese together. Pour over the chicken.. Great served with rice or boiled pasta.
