Living in Florida, I have the opportunity to grill outside all year long. I love to marinate my steaks for at least 4 hours before grilling. If you have the time to get it ready the night before it's the best for tenderizing. Caprese Panini Recipe

A simple Panini bursting with flavor we just love it's simplicity...      Use a simple gridded Iron Skillet and a heavy fry pan to put on top of the sandwich to weigh it down or use a Panini maker. Italian Bread Fresh Basil Leaves Sliced Tomatoes Preferably Plum Rosa Slices of Mozzarella or Provolone Butter Heat the pan or Panini maker and oil or spray with cooking spray. Spread the bread with butter. Place  two slice of mozzarella cheese on the bottom, layer with tomatoes then top with basil leaves. Add the top slice of bread and place in the pan. Use a heavy duty fry pan and place on top of the sandwich to weigh down to get the dark lines on the bread and also helps melt the cheese.  Flip and repeat .  You can also ad prosciutto if you would like a meat lovers sandwich or regular ham. Porterhouse Steak with Tennessee Whiskey Sauce

2 Porterhouse or T bone Steaks Butter Salt, Pepper Minced Garlic in Olive oil 1 Tablespoon Worcestershire Sauce 1/4 Tennessee Whiskey Olive oil pinch of cayenne pepper Add olive oil to a cast iron skillet with grates. Sprinkle each steak cooking one at a time with salt, pepper, dash or cayenne pepper. Grill steaks in a cast iron skillet on a hot heated grill and Sear on both sides for around 5 minutes each side for medium rare. In a small skillet add the garlic, Worcestershire sauce, Whiskey and butter. Heat and boil for 2 minutes. Pour over steaks. Optional: Season with Montreal Steak Seasoning for extra kick ENJOY!

Grilled Tennessee Whiskey Chicken Recipe

Using a good Tennessee Whiskey this is one that is asked for time and time again! The flavors are perfect for chicken or pork. Always comes out juicy, tender and flavorful! 1/4 cup Tennessee Whiskey your favorite brand 1/4 cup Soy Sauce 2 tablespoons lemon juice or lime juice 2 cloves minced garlic 1/2 cup ketchup 1/2 cup dark brown sugar pinch of cayenne pepper 1 tablespoon olive oil 1/4 teaspoon smoked paprika 6 pieces of Chicken of your choice. This works great with pork ribs too! Place all ingredients in a small saucepan, except chicken. Boil for 5 minutes or until thickens. Cool. Place your preferred chicken pieces in a large zip lock bag. Pour half the sauce over the chicken to marinate chicken pieces for at least 3 hours or overnight. Preheat grill or bake in a preheated oven on a grated cast iron pan. Place chicken pieces on an oil sprayed hot grill. Cook on one side around 12 to 15 minutes and flip. Orange Sauced Grilled Wings Recipe

5 pounds frozen wings thawed blotted dry Cooking methods: Bake at 400 degrees till crisp 20 minutes or deep fry until crisp around 10 to 12 minutes, ( or if you can grill outdoors recommended cook until you have some good grill marks on the outside of the wings.)  Set aside. Sauce: 1 cup honey 1/4 cup orange juice 1/2 cup soy sauce 2 tablespoons ketchup 1 teaspoon garlic powder pinch of red pepper flakes 2 tablespoons butter melted 1/2 teaspoon ginger salt and pepper to taste Place all ingredients in a measuring cup to blend together except wings. Pour this mixture over the cooked wings added to a large baking sheet keeping wings in a single layer. Bake the cooked crisp wings with sauce on top for around 20 minutes until heated through.

Game day will never be the same without these!    Italian Gold Roasted Garlic Wings 1/4 cup melted butter 2 tablespoon yellow mustard 4 tablespoons brown sugar 6 tablespoons extra virgin olive oil 1/2 cup of hot sauce 1 teaspoon cayenne pepper,black pepper or more if you like extra hot 2 whole garlic cloves roasted (Drizzle garlic with olive oil, then wrap in aluminum foil. Bake in preheated oven for 1 hour.) Grilled Ham Slices with Honey Pineapple

 Grilled Ham is one of my favorites, sweet, tender and love that grilled smokey taste! 1/2 cup light brown sugar, packed 1/2 cup honey 1/2 cup dry red wine 1/2 cup pineapple chunks 1/2 teaspoon 1 clove garlic, minced 4 large cooked ham slices cut in half. In a large bowl, whisk together the brown sugar, honey, red wine, pineapple, and garlic. Place the ham in the marinade, turn to coat it, marinade up to 4 hours, or cover and refrigerate overnight. Turn the ham in the marinade at least six times. On a hot preheated grill, cook ham slices until grill marks are on both sides dark and ham looks like its glazed.
