Healthy Banana Pancakes



Good Morning. Looking for a breakfast recipe? I have one for you.


Mornings are always a perfect time for us to cook. The sky is the limit when you are waking up. Fresh ideas pop into your head like a fresh cup of brewed coffee. In fact, I am going to grab a cup right now. Sip, sip, sip.


Ok, now that I have my caffeine it is time to make the pancakes.




These came out gorgeous!








Homemade Is Always Better




There is nothing complicated about this recipe. It is very simple and made with simple ingredients.



Sure there is ready to go pancake mix, but a little more time and you have a healthier homemade pancake.



Nothing beats that or tastes better.







Fluffy And Light






Don't be fooled by the thin batter. That is just how it is supposed to be. Some batters are thick, but not this one. Trust me.



They will come out fluffy and delicious, every time. If you aren't a Banana fan, this recipe will work with other fruits or toppings.



Try adding fresh blueberries, raspberries or blackberries. Or add a handful of chopped pecans or walnuts to the batter.




Yields: 5 to 6 servings


Prep Time: 10 minutes


Total Time: 45 minutes



What You Need


  • 1 Cup of King Arthur 100% Whole Wheat Flour
  • 2 Tsp of Baking Powder
  • 1 Tbsp of Stevia
  • 1/4 Tsp of Salt
  • 2 to 3 extra ripe Bananas, Mashed.
  • 1 Cup of Milk
  • 1 Egg, beaten
  • 1 Tsp of Vanilla
  • 2 Tbsp of Canola Oil



Preparation



1. Pre-heat griddle or skillet to medium-low heat. Spray with nonstick cooking spray.



2. In a medium bowl, mix together your dry ingredients. Set aside.



3. In a large bowl, add bananas and mash.



4. Add your milk, egg, vanilla and canola oil to your bananas and mix well.



5. Add your dry ingredients. Mix well. The batter will be lumpy but that's ok.



6. Add a teaspoon of butter to your skillet and let melt. Using a ladle, drop a spoonful of batter in the middle of the skillet. The batter will spread out into a circle. Let it cook for about 2 minutes, and gently lift one side with a spatula. If it is golden brown, flip it. Cook until golden brown again. Remove from the skillet.



7. Allow them to cool before serving. Enjoy them with your favorite syrup or topping. Whipped cream or Extra fruit. I prefer them plain myself, they are so good.

Curt's Grilled Black and Blue Bacon Angus Burger Recipe

One of my specialities I made this summer. It's hard not to fall in love with these burgers if you a blue cheese and bacon kind of lover like I am. This melted blue cheese is one of my favorites.   Use an age Danish Blue Cheese at least aged over 60 days.    A little on each burger will go a long way, it's a very strong tasting cheese.   I love blue cheese so there is no such thing as too much for me!
