Curt's Healthier Banana Pancake A New Tradition

Hey Everyone!
Mornings have always been one of our favorite times to cook. The sky is the limit when you are waking up. Fresh Ideas pop into your head like a fresh cup of brewing coffee. In fact, that sounds so good I am going to grab a cup right now..BRB

Ok, now that I have my Caffeine it is time to make the pancakes :)

These came out gorgeous!

Highly Recommend only REAL maple syrup! But honestly these didn't need any!

Ingredients and Instructions:
1 Cup of King Arthur 100% Whole Wheat Flour
2 Tsp of Baking Power
1 Tbsp of Stevia Sweetener
Pinch of Salt

Mix these in a bowl thoroughly and then set aside until banana mixture is ready to mix in.

Pre-heat Griddle or Cast Iron Skillet to low to medium-low heat
Spray with non-stick spray either butter flavored or coconut oil based like I used

Take 2 ripe Banana's and add to a zip-lock bag and mash until completely pulverized
Add one cup of Milk
1 Egg beaten
1 Tsp of Vanilla Real or Imitation
2 Tbsp of Canola Oil
Blend Well inside the bag, shake it mash it. <The kids love this part!

Take blended bag of goodies and add to dry mixture and blend well. It will be lumpy and do not worry this is normal.

This is what it will look like in bad lighting.

Add a Tsp of Butter to the skillet for Each pancake before adding batter to pan, this will crisp up the pancakes on the outside and add flavor. You could use margarine if you wish, however I believe butter to be better for you and for flavor. (Opinion)

P.S. It would be wise to let cool before you eat these, as the banana will burn your mouth.
