Mom's Italian Style Meatloaf Recipe

Loaded with peppers and delicious tomato sauce on top, you can add whatever you like but this is my favorite recipe for meatloaf adapted just a little!  Here is mom's original recipe from at

Mom's Italian Style Meatloaf

1 1/2 pounds ground beef or ground turkey
2 eggs, beaten
3/4 cup dry Italian style flavored bread crumbs
1/4 cup tomato sauce plus 1/4 cup more for the top
1/4 grating cheese
1/4 teaspoon of cayenne pepper
1/2 teaspoon Worcestershire sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon fennel seed (optional)
2 cloves of minced garlic
1/2 teaspoon garlic powder
 salt and pepper to taste

 2 bell pepper sliced into strips 

Mix everything together until it holds together nicely.  In a large baking pan, place some olive oil on the bottom of the pan. Place slices on peppers on the bottom.  Mound the meat into the peppers. Top with more peppers.  Add more tomato sauce on top and bake at 400 degrees and browned on top and crispy is the way we like it.
