Potatoes Rueben Style Recipe

We just love this casserole, it's comfort food at it's finest!

4 cups mashed potatoes homemade or instant
2 large eggs
1/4 cup milk
1/3 pound thickly sliced corned beef cut into 1/2 inch pieces (available at grocery deli)
1 can Bavarian sauerkraut, drained (14 oz)
1 tablespoon spicy brown mustard
3 tablespoons Thousand Island Dressing
2 cups shredded combo or Swiss cheese and Cheddar reserving two tablespoons

Preheat oven to 400F. In large bowl, stir together potatoes, eggs and milk until well combined. Stir in corned beef, sauerkraut, dressing and mustard. Set aside 2 tablespoons of cheese. Stir in remaining cheese into potato mixture. Pour into a greased 8 x 8 inch oval baking pan. Top with 2 tablespoons cheese. Bake 15-20 minutes or until top is golden.

Dear Curt, I love rueben
sandwiches. They are delicious.
This as a casserole must be really good too.
Don't worry, I know it is difficult to keep up with visits. I find it very difficult myself and always think that people must think I forgot about them, though I didn't. It is just that life is much more hectic and harder to keep up with.
Take care and blessings, Catherine
Great post.. This very helpful info for all. Thanks
